Reviews - A single-vineard release, at this stage of its development a literal blockbuster, almost impenetrably dark garnet in color, opening with firm tannins and nearly intense spices and oak. Given time in the glass shows fine balance and structure, the wood and tannins yielding comfortably to blackcurrants, blackberries, and an abundance of chocolate, all lingering long and comfortably on the palate. Give this one the time it deserves and it will show black cherry and perhaps even note of raspberries and red licorice, the winemaker wisely letting the terroir of the vineyard show its best. A blend of Cabernet Sauvignon, Petit Verdot, Merlot, Malbec and Cabernet Franc (57%, 31%, 5%, 5%, 2% respectively) showing a generous array of blackcurrant, blackberry, and dark plum fruits, those supported by gentle notes of spicy oak and fresh acidity. This is Kosher. Domaine du Castel is one of Israel’s most prestigious wineries, invariably on most short lists in the “best winery of Israel” debate. Founded in 1988, it produced its first wine only in 1992. It is a little bigger than some of the micro boutiques, but still produces only around 8,300 cases a year. There is a French sensibility on the labels, from the winery’s name, to the identification of the appellation (Judean Hills, near Jerusalem) as Haute Judee. This is not surprising, perhaps, given that Castel is a family run business, and son Ariel trained in Burgundy and then worked at Domaine Emile Voarick.

Winemaker's Notes - The grapes (100% Cabernet Sauvignon) were harvested from vineyards in Jerusalem Hills (including our own vineyards in Psagot, Israel). The grapes are brought immediately after harvest into the winery for a gentle crushing and destemming. The must is fermented in stainless steel tanks starting off cool (60º F) and working up to an aggressive fermentation (93º F). The wine underwent both pump-overs and punch-downs as much as five to eight times a day. The wine additionally underwent a full malolactic fermentation in French and American oak barrels giving the wine a very complex character. The wine was aged in oak barrels for 14 months

Winemaker's Notes - Psagot Viognier is produced from Viognier grapes which were harvested from the vineyards of Moshav Mata in the Judean mountains. The vineyard is located within a deep wadi that preserves a high humidity and low temperatures even on the hottest days of the year. Half of the wine is aged in new 500-liter French oak wood barrels, and half is aged in stainless steel tanks. The aging process is carried out sur lie (on the lees) for eight months. The wine is characterized with deep, rich floral aromas of anise, apricot, honey and lemon. The wine is light and easy to drink and is especially compatible with grilled fish, pasta with vegetables and various types of quiches
